Mexican Salad
We need
1/2 medium cucumber, chopped
1/2 can whole kernel corn, drained
1/2 can stewed tomatoes, drained and sliced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
2 teaspoon red wine vinegar
1 teaspoon crushed red pepper flakes
Garlic, minced to taste
Cumin to taste
Dried cilantro to taste
Salt to taste
Ground black pepper to taste
Preperation
1. In a bowl, toss together the cucumber, tomato, corn, red wine vinegar, green and red bell pepper.
2. Season with crushed red pepper flakes, garlic, cilantro, cumin, salt and black pepper. Cover.
3. Serve chilled.
