Ingredients

 

1 zucchini
1 sliced red bell pepper
1 sliced yellow bell pepper
1 sliced yellow squash
1 sliced red onion
2 large fresh button mushrooms
2 cherry tomatoes
1 tablespoon olive oil
1 tablespoon soy sauce
1 tablespoon lemon juice
1/8 clove garlic, crushed

Preparation in steps

1. In a bowl place the zucchini, red bell pepper, yellow bell pepper, red onion, squash, mushrooms and tomatoes.
2. In another bowl, mix together olive oil, soy sauce, garlic and lemon juice. Pour over the vegetables.

3. Cover and marinate in refrigerator for 30 minutes.
4. Preheat grill for medium heat. Lightly oil grate.
5. Remove vegetables from marinade and place on preheated grill. Cook for 12-15 minutes or until tender.

You're done!
